Home cooking: Baskran and Sujata's toor dal protein snack
Every day, local cooks Baskran and Sujata prepare an evening protein snack for the Oshadi Collective team. They usually use seasonal pulses and produce from the farm. To ensure the soil health is maintained, a variety of crops is rotated with the cotton. This also promotes biodiversity. The basis of the daily snack might be toor dal, blackgram, or chickpeas with other vegetables and herbs from the farm such as chillis and coriander.
The ingredients for the daily protein snack are based on whatever is seasonal and is a way of sharing the produce from the farm with the collective. Everything is organic and as fresh as can be. With Baskran and Sujata's expert cooking, its always a tasty and nutritional treat!



















INGREDIENTS
Serves 50
- oil
- masoor dal
- fenugreek
- mustard seeds
- ginger paste
- red and green chillis
- onions, sliced
- curry leaves
- fresh chopped coconut
- coriander
METHOD
- Heat the oil in a large pan and add the masoor dal and stir
- Add a spoon of fenugreek and mustard seeds until fragrant and popping
- Add a spoonful of ginger paste
- Mix in a handful of green and red chillis with some chopped onions and fry until soft
- Sprinkle some curry leaves and stir
- Add some freshly chopped coconut
- Step seven stir in a handful of fresh coriander. Taste for seasoning. Serve.
